Try this popular, traditional Indian-style fruit pudding for a cooling finish to any spicy meal.

Ingredients

  • 8 to 10 saffron threads
  • 1/4 cup hot water
  • 4 cups diced mango
  • 1 cup farmer cheese
  • 1 cup Greek yogurt
  • 1/4 cup honey
  • 1/2 teaspoon cardamom
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon nutmeg
  • 1/2 cup toasted almonds or pine nuts (optional)

Preparation

  1. Gently place saffron threads in the hot water and let steep for at least 30 minutes (or up to 2 hours).
  2. Place the saffron and water, mango, cheese, yogurt, honey and spices in a food processor and blend until smooth.
  3. Chill for 1 hour before serving. Top with toasted nuts if desired.
