Try this popular, traditional Indian-style fruit pudding for a cooling finish to any spicy meal.
Ingredients
- 8 to 10 saffron threads
- 1/4 cup hot water
- 4 cups diced mango
- 1 cup farmer cheese
- 1 cup Greek yogurt
- 1/4 cup honey
- 1/2 teaspoon cardamom
- 1/2 teaspoon ground ginger
- 1/2 teaspoon nutmeg
- 1/2 cup toasted almonds or pine nuts (optional)
Preparation
- Gently place saffron threads in the hot water and let steep for at least 30 minutes (or up to 2 hours).
- Place the saffron and water, mango, cheese, yogurt, honey and spices in a food processor and blend until smooth.
- Chill for 1 hour before serving. Top with toasted nuts if desired.
