Quinoa and Mushrooms
1 cup quinoa
1 TBS olive oil
1/2 cup chopped onions
8-10 oz mushrooms, sliced
2 cups vegetable or chicken broth
1/2 tsp salt
Rinse quinoa in fine mesh sieve and drain. Heat olive oil in skillet over medium heat. Add onion and mushrooms, stirring constantly.
Add quinoa and stir constantly until grains are separate and golden. Add broth and salt. Bring to boil.
Reduce heat; simmer until liquid is absorbed, 12-15 minutes. Fluff with a fork.
