Healthy Oat Muffins
1/3 cup oil
1/3 – 1/2 cup honey
1 cup whole wheat flour
2 cups oat flakes
1 cup raw wheat germ
2/3 cup orange juice OR 1/3 cup water and 1/3 cup lemon juice
2 tsp vanilla
1/2 c. dried fruit (raisins, cranberries, chopped apricots – your favorite) and/or chocolate chips) (optional)
1/2 cup chopped nuts (optional)
[Note: There is no misprint. The recipe does not call for baking powder or soda.
Blend egg, oil, and honey until smooth.
Mix in dry ingredients alternately with juice and vanilla.
Stir in raisins, nuts, whatever you want.
Spoon into muffin tins lined with muffin papers. Fill each space about ¾ full.
Bake 30 min. in preheated 350° oven.
This is the basic recipe. It can be varied in many ways. For example:
Blend in 2-3 mashed, overripe bananas with the oil/honey/egg mixture.
Mix in two grated apples (core them, but include the peels).
Use fresh berries instead of the dried fruit: blueberries, raspberries, or cranberries are all excellent.
