Couscous Salad

Vegan food

Mix 1 cup boiling water with 1 cup couscous. Let it sit until water is absorbed. Fluff with a fork and add:

1 cup chopped cucumber
1 cup chopped tomato
1/4 cup lemon juice
1 tsp. finely minced garlic
2 chopped scallions
1 grated carrot
1-2 chopped pickles
3-4 tbsp. olive oil
3/4 tbsp. chopped parsley
A few drops of hot sauce
1 cup diced, firm tofu
