Classic Delicious Cranberry Sauce

2 cups water
1 cups honey
4 cups cranberries
2 tsp. grated orange rind (optional)

Heat water and honey to boiling; boil for 5 minutes. Add cranberries. Simmer about 5 minutes, until the berries pop open. Add optional orange rind. Cool into a pretty mold if you have one, or just serve cool. To un-mold, place in warm water for 15 seconds, turn onto plate.
